freckles on me is A-okay
freckles on my bananas is NOT okay.
My perfect banana is still slightly green . As soon as it’s pure yellow I wont eat it and if it’s freckled….forget about it!
That being said, a freckled banana is the ONLY banana for banana bread. mmm….I love banana bread, it’s so moist, the perfect amount of spice and rich sweet flavor .
I had two little freckled bananas sitting on my counter on one rare occasion and I didn’t want them to go to waste. Two aren’t enough to make a batch of banana bread so I came up with
Banana Rama pancakes:
I wanted a lot of deep flavors so I opted for a whole grain mix pancake mix and added to it to make it the best it could be.
The pancake mix calls for eggs and oil. Substituting with apple sauce , water, and brown sugar this is not only a fulfilling comforting snack , it’s healthy! But, shhh….we wont tell.
Over a medium low heat I added brown sugar , vanilla , and cinnamon to syrup to get a flavorful topping to these sweet early morning treats.
Early morning treat or midnight indulgence ??

Banana rama pancakes:
1 CUP whole grain organic pancake mix
1/2 CUP apple sauce
1/2 CUP water
1 TBSP brown sugar
1 smooshed freckled banana
heat electric griddle to 375 deg.
combine all ingredient only until Incorporated, don’t over mix or pancakes will be tough .
spoon mixture onto grilled and allow to sit until bubbles form ontop of the pancake (theses take longer to cook than traditional pancake)
When bubbles begin to form , flip and allow to cook the same amount of time
top with your favorite syrup, fruit, or nuts. These were so yummy they were enjoyable even plain!
