It’s time to go to the grocery store.
The cheapest family in America. Have you seen these people?
No that’s not my family!
My family is going to write a book called ”Above our raisin’”
{laugh}
I need to buy the CFIA and learn a thing or two about a thing or two ’cause I spend their ‘monthly allowence’ on groceries in a week!
{sigh}
I’m am : right here right now, going to vow to be more frugal. I’m going to sit down and make a family meal menu and make a grocery list only for the things I NEED !
……………meanwhile………….
I have no groceries.
There are a few things I ALWAYS have on hand.
eggs
milk
tortilla shells (corn and flour)
canned everything (seriously)
onions and bell peppers
long story short. … I’m hungry
I have just the right ingredients for a yummy ummy scrumdidilyumtious FRITTATA!
heat a 9″ cast iron skillet
I sauteed some onion and bell peppers until golden brown
removed from the pan
lined the bottom of the pan with corn tortillas (trust me)
mixed together 6-8 eggs and a splash of milk and a few shakes of hot sauce
pour egg mixture over the tortilla shells
add canned (very drained!) spinach,ham,the sauteed onion and bell pepper,pepper jack cheese , and salt and pepper to taste
bake in a 450 degree oven for 10-15 minutes until firm and golden brown
Do you hear that?
huh?
That’s the sound of one really full belly (even withOUT tons of groceries)
If I had some shredded chicken to add to this and maybe some sweet corn…ahh..it would have been perfect!
Now I have to go create! My son is running for prince (who ever raises the most money for our school wins)
