iced coffee: coffee, sugar, cream . Right?
Well it’s the logical thing to do . But, it just doesn’t hit the spot like when I purchase it through a drive-thru. Plus , no matter how strong I brewed my coffee I couldn’t get that strong coffee flavor that I craved.
I started reading through a few different methods of making authentic , tasty ice coffee. They just didn’t seem to do it for me either.
Adding sugar creates a big gulp of a gritty disaster.
Some make a mixture of heavy cream and sweetened condensed milk. … I can only imagine the calories!
I want to share my version, a perfect balance , just right for me (and you!)
First things first:
Start tonight , have iced coffee tomorrow.
Tonight before bed get a large container add 3 cups coffee grounds and 4 cups fresh filtered water. give a good stir or shake.
Refrigerate over night .
The next morning run the mixture through a reusable coffee filter into a sealed container. This will be your coffee concentrate to refrigerate and use over and over.
( I used the left over coffee grounds, added 4 more cups of water, shook, then created a whole new batch using the same grounds!)
On the same night you start your coffee concentrate , get a small sauce pan for a simple syrup .
Add 1/2 cup brown sugar , 1/2 cup granulated sugar ,and 1 cup water.
Over medium heat , allow sugar to melt completely and set aside
Using a funnel, poor into a glass container.
Refrigerate overnight for a simple syrup to use over and over.
Usually a simple syrup is a 50/50 mixture of granulated sugar and water. I enjoyed the additive of brown sugar a deeper caramel like flavor.
Next morning, you wake up ,groggy , and in serious need of some caffeine .
Get a 12 oz. glass, fill with ice.
Add 4 oz. coffee concentrate
4 oz whole milk
1 1/2 tbsp sugar concentrate
I then like to add 1 TSP of chocolate syrup. I’m not a big fan of chocolate . But, it really brings the coffee flavor up to a new level…they are best friends.
drink and drift off into a chilled caffeine utopia .
Coffee concentrate :
Ingredients-
3 cups good quality ground coffee
4 cups filtered water
In a large container stir together and refrigerate over not (the longer ,the stronger)
Simple syrup:
Ingredients-
1/2 cups granulated sugar
1/2 brown sugar
1 cup water
In a small saucepan , over medium heat, allow sugar to melt then remove from heat.
Momma’s pick me up iced coffee:
A 12 oz glass completely filled with ice
4 oz. coffee concentrate
4 oz. whole milk
1 1/2 TBS simple syrup
1 TSP chocolate syrup
Combine all the ingredients, stir well , and enjoy!

Once, a long time ago, I had a neighbor who made this concentrate….it is how I developed a love of coffee…while our kids played she gave us iced coffees…
